# 油温判断技巧
* 油温在120-140之间适合软炸、滑炒, 把筷子放入油锅中,周围基本不起泡泡,无青烟、无响声、油温平静。
* 油温在150-160之间最佳烹饪温度把筷子放入油锅中周围会冒出少许油泡略有青烟油从四周往中间翻动。
* 油温在160-180之间适合上色炸酥把筷子放入油锅中大量青烟上升油面反而较平静。
* (注) 最好买把油温枪,谨慎使用温度计。
